The aim of this experience is to introduce you to the art of making authentic sourdough bread, in a hygienic, socially-distanced, but fun environment here in Boston Road, Henley-on-Thames.

The experience begins at 10.30am in my home (free parking, a 5-minute walk/ short taxi ride from Henley-on-Thames train station). Together we will make our own loaves, using sourdough ferment (the starter), and combining it with strong white bread flour, spelt, water and sea salt.

With the help of a few simple tweaks, we will bake the bread in a standard domestic oven to a professional standard. See guest photos...

I shall show you a little-known, French kneading technique to make light and airy dough quickly and efficiently. You will also learn how to look after your starter, that you will be given to take home, along with your very own fresh-baked, sourdough bread. You will also have a shaped, unbaked loaf to take home which can be baked the next day in your own home - a great way to impress friends and family.

During lunch we will enjoy some fresh-baked sourdough, paired with a selection of cheese, charcuterie and wine.

The experience will take place in a large kitchen that is only used for baking bread. With places limited to four people the one-metre distance rule can easily be respected, while still allowing for thorough participation in the experience itself.

The Boston Road Bakery is in the heart of Henley-on-Thames. We make sourdough bread. Properly. You can too. It all started a few years ago when I got hooked on Richard Bertinet's sourdough bread. I then decided to learn how to make it myself. While the ingredients are few and simple - flour, water, ferment, salt - developing the skill and the confidence to "show the dough who is boss", can benefit from a guiding hand. In 2018, I had the amazing good fortune to take Richard Bertinet's intensive bread-making course in Bath. I haven't bought a loaf since, recently scaling up production to supply a local cafe and local residents here in Henley-on-Thames. I'm keen to share my knowledge and experience of sourdough with others, in a fun, relaxed but socially-distanced environment. Bon appetit.

An excellent learning experience with a great teacher. I really enjoyed the opportunity to ask lots of questions and get enough time and hands-on time with the dough. I left with a loaf of DELICIOUS sour dough bread and a portion of starter too. Now I just need to see if I can reproduce what Tom makes look so easy when I'm on my own! Thanks Tom!

We had an amazing time, would definitely recommend this experience is you are into your sourdough bread. Tom demonstrated all of the techniques and helped us master them. Tom was very friendly and we felt really welcome. We had a lovely lunch with the sourdough bread at the heart of lunch. We went home with a freshly baked loaf of bread and a jarful of starter. Such a great time!

We really loved our bread making course with Tom! Tom is really friendly and knows everything there is to know about making sourdough. It was a good mix of demonstration and being able to make your own. It was great to be able to take home a loaf as well as some starter to keep us going beyond the course. The lunch was YUMMY!! Very generous selection of bread, meat and cheeses with a glass of wine - lovely.
